Hakata Ramen (博多ラーメン)

Hakata Issou (博多一双)

For those who want the richest, thickest tonkotsu broth possible. The soup is almost creamy-thick with a distinctive "foam" layer called tonkotsu cappuccino. Small shop near Hakata Station. Price: approx. 850 yen.

Ichiran (一蘭)

The internationally famous chain that originated in Fukuoka. Known for its solo-dining booths (ramen focus counter) where each seat has wooden dividers. You customize your order on a paper form: broth richness, noodle firmness, garlic, spice level, green onion, and chashu. Great for first-timers or solo diners. Price: approx. 980 yen.

Ippudo (一風堂)

Another global brand born in Fukuoka. The Daimyo original shop has a different atmosphere from the overseas locations — smaller, more authentic, and the broth has a distinct smokiness. Two signature bowls: Shiromaru (classic) and Akamaru (with miso and garlic oil). Price: approx. 890 yen.

Yatai Street Stalls

Hours: Most operate 6 PM-2 AM. Arrive early (7-8 PM) to avoid waits. Etiquette: Don't linger too long when others are waiting. Most seats last about 30-45 minutes. Cash only at most stalls.
